Thau Lagoon

A shallow inland sea, between 3 and 6 metres deep, fed by the Mediterranean, the Canal du Midi, numerous streams and the hot spring at France’s largest spa, Balaruc-Les-Bains, which is loaded with carbonate of lime. The result is a ‘merroir’ with a rare balance between seawater and freshwater, a rich and varied biotope and a southern climate where the sunshine accentuates exchanges and photosynthesis. A marker of the quality of the water in this lagoon, colonies of spotted seahorses, marine animals that are sensitive to pollution, thrive peacefully here.
This unique ecosystem has given Bouzigues oysters their reputation. An oyster with fine flesh and iodised flavours.

Marseillan

MEDITHAU, an oyster farm in Marseillan, the birthplace of the solar tide.
This site, which combines tradition, invention and technology, is the birthplace of the Spéciales Tarbouriech and the first certified organic shellfish.

Site mainly dedicated to oysters, 4,800 m2 of processing rooms and laboratories, 1,750 m2 of ponds.

Ostras del Sol, the Tarbouriech oyster farm in Spain. The meeting of two passions to extend the adventure on a new enchanted lagoon.
It was on the Mediterranean coast, in the hollow of the Deta de l’Ebre, that we found an area suitable for oyster farming, where the gluing technique was already being used, that we were able to implement our solar tide farming method.

Lagoon of Scardovari

In Italy, in the Po Delta, a lagoon of incredible richness and bewitching beauty.

In 2015, the Po Delta was recognised as a Biosphere Reserve by UNESCO. This designation is awarded to model zones that reconcile sustainable development and biodiversity conservation.

An ideal setting for the development of our shellfish, farmed with respect for the environment, a core value of Maison Tarbouriech.

It was in the Kumihama Lagoon that we found water of exceptional quality and people motivated by this innovative project.

The adventure began in 2018, in the native waters of the crassostreas gigas, nicknamed the Japanese oyster, when our breeding method began to be put in place.

Phaëton Bay

In early 2020, the project to produce oysters for the table in pearl oyster country took shape. it was in the Bay of Faratea that we found a team keen to test the deployment of our breeding method to combat the local disease: polydora.

Our Polynesian subsidiary was born out of our desire to set up a farm in Tahiti rearing oysters for human consumption, in order to significantly reduce imports of oysters reared in mainland France or New Zealand.

In partnership with the public authorities, stakeholders and local scientists, Ostréa Tahiti is launching a full-scale oyster farming 2.0 experiment on endemic Saccostré species.
