The Réserve Tarbouriech oysters are exposed once a week and benefit from the best of the lagoon and the sunshine. The result is an oyster with a radiant shell, firm flesh, delicate flavour and a subtle balance of iodine and sweetness. After a minimum of 18 months between lagoons, the Mistral and the Tramontane, enjoying the benefits of the sea, the air and the sun, the finest Mediterranean oysters have reached maturity. These oysters will be able to claim the “Reserve” designation, guaranteeing traceability from the farming rope to the consumer, a Special meat content and optimum freshness.
